quick pressing of the grapes without removal from stalks. Vinification in white for Pinot Noir with fermentation at low temperature.
Subsequent second fermentation in the bottle to form the bubbles

Ageing:

36 months in the bottle on yeasts, manual remuage and subsequent disgorgement.

Organoleptic properties:

bright straw yellow in colour with a full bouquet with fruity notes of Golden Delicious apple and spicy hints of yeast and crusty bread.
A mellow palate reveals a splendid freshness that makes it gutsy to drink.
Excellent gustatory persistence and well-balanced towards the end.
A delightful mineral element and fine perlage.
