Alcoholic fermentation:

in stainless steel with long maceration on skins, without the addition of sulphites in the entire vinification process.

Ageing:

12 months in large 30-hectolitre oak barrels.

Organoleptic properties:

ruby red colour with hints of garnet. The
bouquet is immediately elegant and this continues to the palate. The
absence of sulphites means the Sangiovese expresses the purity and
precision of the variety, revealing hints of Marasca cherry, plum and
blackberry. The fruity aromas quickly give way to hints of leather and
forest undergrowth. The palate has a noble austerity with a tannin
structure that is not aggressive and ends with mineral notes and a
prolonged finish.
